Jaggery dosa or vellai dosa is a sweet dosa made with wheat flour and jaggery. You can serve this as a breakfast or an evening snack for kids.
- Add 1/2 cup of water to jaggery and melt it over low heat and filter it to remove impurities.
- Allow it to cool. Then take wheat flour, cardamom powder and melted jaggery in a bowl and mix well. Add more water to get a dosa batter consistency. The batter should neither be thick nor too thin.
- Grease a pan or tawa with a little ghee in the center and heat it. Once the pan is hot, reduce the heat to low.
- Take the ladle of batter and pour it in the center of the pan and spread it in a circular motion. Do not spread too much. Make small dosas.
- Drizzle 1/2 teaspoon of ghee around the dosa. Once the corners start lifting up, flip the dosa to the other side. The whole process has to be done on low heat.
- Once cooked, remove from the pan and serve hot. You do not need any side dish for this dosa as it tastes good on its own.
- This dosa should be taken slightly hot.
- The colour of the dosa depends on the colour of the jaggery used.
- You can use refined oil for making dosa instead of ghee.

If preferred, you can add grated coconut, few chopped cashew nuts and raisins to the batter to more delicious.
