Potato gravy (Aloo Ki Sabzi)

       Potato gravy or aloo ki sabzi is a delicious flavorful potato gravy that even a newbie can try. Let's see how to prepare this spicy gravy.
    Ingredients
    Potato (cooked)            - 3 or 4 medium-sized
    Onion                           - 1 medium-sized
    Tomato                         - 1
    Oil                                - 2 tsp

    Mustard seed                - 1/4 tsp
    Cumin seeds                 - 1/4 tsp
    Ginger (grated/paste)   - 1/2 tsp
    Garlic (chopped/paste) - 1/2 tsp
    Turmeric powder          - 1/4 tsp
    Red Chilly powder       - 1/2 tsp
    Coriander powder         - 1/4 tsp
    Garam masala               - 1/4 tsp
    Freshly chopped coriander leaves - as required
    Salt                               - as needed
    Water                            - as required
    Preparation
    • Heat oil in a pan. Add mustard seeds into it and let it splutter. After that add cumin seeds and mix it well. 
    • Add ginger and garlic paste and saute it for few seconds.
    • Then add chopped green chilly to make spicy (Do not put green chilly while making for kids). Fry green chilly for few seconds. 
    • Then add chopped onions. Stir it on medium flame till the onions become translucent. 
    • Add chopped tomatoes to it and mix well. To this add 1/2 tsp salt to make the cooking fast. Mix it well and cook till the tomatoes become soft and mushy. 
    • Add turmeric powder, red chilly powder and coriander powder to it. Mix all the spices and cook it on medium flame. 
    • Then add cooked potatoes and freshly chopped coriander leaves. 
    • Add salt to taste (I have added salt while frying tomatoes so add salt accordingly). 
    • Then add garam masala. Mix it well till all the spices gets well combined. 
    • Add water to make potato gravy or curry (Add water as per the desired consistency). Mix it well and bring it to boil. Then cover the lid and cook for 2-3 minutes. 
    • Serve hot as a side dish with chapati, poori (breakfast recipes) or rice.
    Useful tips:
    • Do not put green chilly while making for kids.
