Beetroot barfi or beetroot coconut barfi is a deliciously sweet, which can be made very easily in any festival. Let's see how to prepare it.
- Pour 1 tablespoon of ghee in the pan and add grated beetroot and coconut to it.
- Saute till raw smell leaves. This will take at least 15 minutes in low flame.
- Now add sugar and cardamom powder to it. Keep stirring until the mixture would have thickened and starts to leave the sides of the pan.
- Then transfer the mixture to the greased plate and garnish with roasted cashew nuts. Cool and then cut into squares.
Useful tips:
- Always cook the whole process in medium flame.
- Use finely grated coconut and beetroot. If your coconut is not finely grated, run it in a blender once (nearly 2 to 3 sec) till it is fine.
