Beetroot Thoran

       Beetroot Thoran is a simple and delicious Kerala recipe made with beetroot and coconut. It is served with plain steamed rice. It is a common side dish on the Onam sadhya menu.
    Ingredients
    Beetroot                - 1 cup (grated or chopped finely)
      Coconut                - 1/4 cup (grated)
        Beetroot Thoran.jpgCoconut oil           - 1tbsp
          Green chilies         - 2
            Onions or shallots - 1/4 cup (finely chopped)
              Mustard                 - 1/4 tsp
                Curry leaves          - 1 sprig
                  Turmeric powder   - 2 pinch
                    Salt                        - as required
                      Preparation
                      • Heat a pan with oil and add mustard seeds. 
                      • When they begin to crackle, add curry leaves to it. Saute for a few seconds.
                      • Add chopped onions to it. Fry until they turn transparent. 
                      • Add grated beetroot to it. Sprinkle salt and stir fry for a few minutes. 
                      • Meanwhile add grated coconut, turmeric powder and green chilies to it. Mix well. 
                      • Saute for few minutes on a medium flame. Cover and cook until the beetroot is cooked well. If the beetroot is not tender, sprinkle little water and cook.
                      • Serve beetroot thoran with steamed rice.
