Boondi laddu

       Today I am sharing an easy laddu recipe with you. Boondi laddu is an Indian sweet laddu prepared from the besan or gram flour. It is simple and easy to make at home. Let's see how to prepare laddu during festival season or for any auspicious or religious occasions.
    Ingredients
    For boondi preparation:

        Turmeric powder   - 1/2 tsp
          Water                     - as required
            Salt                        - 1/4 tsp
              Sunflower oil        - as required
                For sugar syrup:
                  Sugar                     - 3/4 cup
                    Water                     - 1/2 glass
                      Other ingredients:
                        Ghee                      - 1 tbsp
                          Raisins                   - as required
                            Cardamom             - 2
                              Preparation
                                Boondi preparation:
                                • Firstly, we have to prepare boondi from besan batter. So in a large bowl take gram flour along with turmeric powder and salt. Mix well. 
                                • Then add 1/4 cup of water to it and whisk smooth without forming any lumps. Add more water as required and prepare a thick flowing consistency batter. 
                                • Heat sunflower oil in a pan. Take small holes perforated spoon and pour prepared besan batter to it. Slowly tap with the help of another spoon, making sure the drops of besan fall into the oil. Do not overcrowd the boondis in oil. Stir occasionally. 
                                • Once they are almost crisp, transfer it into a bowl. Allow it to cool. 
                                • Then into a blender add all boondis and blend it for 2 seconds.
                                • Transfer this mixture into a small bowl.
                                Sugar syrup preparation:
                                • In another pan, take 3/4 cup of sugar. To that add 1/2 glass of water and mix well till the sugar dissolves.
                                • Add cardamom to it and allow to boil till you attain 1 string consistency. 
                                Laddu preparation
                                • Pour slightly warm sugar solution over prepared boondi. Mix well. Then cover the bowl and keep aside for 10  to 15 minutes.
                                • This time roast raisins in 1 tbsp of ghee and keep aside.
                                • When the boondi mixture still lightly warm (enough to handle), take small portions of the mix along with raisins and roll to balls to prepare laddu. 
                                • Store laddu in an airtight container once cooled.
                                Useful tips:
                                • Here, I have added turmeric powder for yellow coloured laddu. Alternatively, you can add yellow or orange food colour or you can totally skip the colour.
                                • The sugar syrup consistency is very important while making laddu. Ideally, one string consistency is suitable.
                                • Add a very little amount of salt. Otherwise, you can skip the step of adding salt in besan batter.
