Kaipola or kaya pola is an easy and delicious Malabar snack which is known to be made in the Ramadan month. A banana, an egg, and a few spoons of sugar are enough to bake it. Let's see how to make this snack.
Ripe Banana - 2
Egg - 3
Sugar - 2 tsp
Ghee - 3 tsp
Cardamom (crushed) - 2
Raisins - 10
Cashew nuts - 10
Preparation
- Peel and cut bananas into small pieces.
- Heat 2 tsp ghee in a non-stick saucepan and fry the cashew nuts and raisins separately. Keep them aside.
- To the same pan add sliced banana to it. Fry theses banana pieces in low medium heat till it becomes golden brown. Then turn off the flame.
- In a bowl add egg, sugar, cardamom, fried raisins and cashew nuts. Whisk them well.
- Add fried banana to this egg mixture and mix well.
- Heat ghee in a pan and also smear ghee on to the sides. Add banana mixture into it. Cover with a lid then cooks for 15 to 20 minutes on a low flame. With a fork just check the inside is cooked or not. Once done remove it from heat. Allow it to cool.
- Cut it into pie-shaped pieces and serve with tea.
